4 Energy Ball Recipes - Perfect Snacks for Adults and Kids

I don't know about you, but I like snacks.  Something that tastes good and ties me over until the next meal is ideal.  And like you, I want to make healthy food choices not just for me, but for my child as well.  

My daughter and I like to enjoy the summer days doing fun things like going to parks, bike rides, and swimming.  IT IS CRITICAL TO BE PREPARED  with snacks and water. The same applies to a normal work day.  You get to work (hopefully you had breakfast) and 10:30am rolls around and you are already thinking about lunch.  Great time for a snack!  

I love making energy balls because they are so easy, taste good, and I do not have to feel guilty about me or my daughter eating them.  These snacks are packed with protien and will give you the energy to get through the work day and replenish you and your kids during your summer day explorations.  There are tons of ways to make these, but below are my favorites.  ENJOY!

**Quick Notes**
EQUIPMENT
  • High-speed food processor
  • Cookie Sheet
  • Parchment paper
  • Wooden spoon
  • Spatula
  • Cookie Scoop o tablespoon

STORAGE METHODFor longer lasting balls I suggest storing them in the freezer.  Place a piece of parchment paper on a baking sheet and spread the balls out on the sheet and pop them in the freezer for about an hour or two before transferring into a gallon-size bag. They should stay good for a few months!

Ingredients
  • 1/2 cup unsweetened shredded coconut
  • 1 cup pitted dates 
  • 1 cup unsalted cashews
  • pinch of sea salt
  • 2 tsp vanilla extract
  • 1 scoop vanilla whey protein
  • 2 1/2 T rainbow sprinkles

Instructions
  1. Add coconut to food processor and process for 5 mins, scraping down the sides as needed. 
  2. Add in dates in process until broken up into pea-sized bits.
  3. Add in cashews, sea salt, vanilla extract and whey protein.
  4. Process until all ingredients come together. Mixture is done when you can roll dough into balls and they hold their shape.
  5. Add in sprinkles and pulse several times to combine.
  6. Roll into 18 balls and place in the freezer for 15 mins.
  7. Store in the fridge for up to one month.

Notes
*Make sure your dates are sticky. If not, soak them in hot water for 15 minutes to soften and then drain.

PB and J Swirl Energy Balls
Serves: 28ish

Ingredients
For the Peanut Butter
  • 10 dates, pitted
  • 1 cup peanuts
  • ¼ cup smooth peanut butter, all natural
  • ¼ teaspoon water*
  • 2 tablespoons honey

For the Jelly
  • 10 medjool dates, pitted
  • ½ cup dried blueberries
  • 1 cup almonds or cashews
  • ¼ teaspoon water
  • pinch of salt

Instructions
For the Peanut Butter Side
  1. Place peanuts in a high-speed food processor and process on high for about a minute or until the peanuts turn into a meal. Then, add in medjool dates, peanut butter, and honey. Mix for 1-2 minutes or until your dough is formed. If the dough is too dry at this point, add some water in ¼ teaspoon increments. NOTE- add water in very small amounts, you don't need much! I used ¼ teaspoon.
  2. Scoop out a heaping teaspoon of dough and roll between palms. Repeat.

For the Jelly Side
  1. Place nuts in a high-speed food processor and process for about a minute or until the nuts turn into a meal.
  2. Then, add in medjool dates, dried blueberries, and salt. Process on high for about 1-2 minutes or until your dough is formed. If things are too dry, add some water in ¼ teaspoon increments. NOTE- add water in very small amounts, you don't need much! I used ¼ teaspoon.
  3. Scoop out a heaping teaspoon of dough and roll between palms. Repeat.

For the PB and J Swirl Energy Balls
  1. Press a peanut butter ball and a jelly ball together and roll between your palms to create a PB and J Swirl Ball

Ingredients
  • 1 cup pitted dates 
  • 1/2 cup unsweetened natural peanut butter
  • 2 1/2 T unsweetened cocoa powder
  • 1/4 cup unsalted peanuts

Instructions
  1. If peanuts have are not already crushed, add a 1/4 cup to a food processor and process several times until broken down into bits. Remove from processor.
  2. Add dates and process until broken up into pea-sized bits.
  3. Add in peanut butter and process to combine.
  4. Add in cocoa power until mixture comes together.
  5. Add crushed peanuts back into bowl and pulse several times to bring mixture back together.
  6. Roll mixture into 16 balls and the place in freezer for 15 mins.
  7. Store in fridge for up to one month.

  • 2 cups rolled oats (gluten-free if necessary)
  • 2 tablespoon chia seeds
  • 1/4 cup pumpkin puree
  • 1 1/2 tsp pumpkin spice 
  • 1/4 cup brown rice syrup or other syrup or honey
  • pinch of sea salt

Instructions
  1. Combine all ingredients in a large bowl until they come together in a sticky ball.
  2. Wet hands under water and then roll dough into 16 balls.
  3. Place in freezer for 15 minutes before storing in refrigerator for up to 1 week.
