Clean Eating Easy Dessert Recipes

​Clean eating get such a bad rap sometimes - "it's the way gym freaks eat".   But really, it's taking what we are most likely already eating and cleaning it up.  At its simplest, clean eating is about eating whole foods, or "real" foods — those that are un- or minimally processed, refined, and handled, making them as close to their natural form as possible. So unless all of you meals at home are from a box, you have already done some clean eating.

I don't know about you, but in the summer I love to share meals with family and friends. A week of staying on the right path with food can be destroyed in one single day.  Kind of depressing, but it is the truth.  And it is a real struggle I have faced more than once this summer - the culprit is usually dessert related.

​Whether you are hosting or attending, here are some great clean eating dessert recipes that are easy to make and sure to be crowd pleasers!

LEMON BARS RECIPE (PALEO, CLEAN EATING, GLUTEN FREE)

Ingredients
FOR THE CRUST:
  • 1 1/2 cups Almond Flour
  • 5 tablespoons Tapioca Starch
  • 1/4 teaspoon Real Salt
  • 2 tablespoons Honey
  • 3 1/2 tablespoons Butter, cold, cut into cubes
FOR THE TOPPING:
  • 4 Eggs
  • 3 Egg Yolks
  • 1/2 cup Honey
  • 1/2 Cup + 1 tablespoon Fresh Lemon Juice
  • 1/4 teapsoon Real Salt
  • 4 tablespoon Butter, cut into small cubes
  • 3 tablespoon Coconut Milk (canned)
Instructions
  1. Preheat the oven to 350 degrees. Line a 9x9" baking pan with parchment paper so that the paper goes all the way up the sides of the pan.
  2. In the bowl of a food processor, pulse together the almond flour, tapioca starch, and salt. Add the honey and cubes of butter and process until smooth dough forms.
  3. Press the dough evenly into a 9x9" baking pan lined with parchment paper.
  4. Bake the crust for 10 minutes in the preheated oven, or just until it starts to turn golden brown on top.
  5. While the crust is baking, make the filling. In a large saucepan, whisk together the eggs, honey, lemon juice, and salt until very smooth. Place the pan on medium/high heat and add in the butter cubes. Whisk constantly until the butter melts and the mixture comes to a boil.
  6. As soon as the mixture boils, remove it from the heat. Whisk in the coconut milk and pour the filling on top of the par-baked crust. Return it to the oven and bake for another 10 minutes, or until the filling is glossy and set.
  7. Let cool completely. Refrigerate for a few hours and slice into bars with a hot knife. Keep bars refrigerated in an airtight container.

SWEET POTATO BROWNIES RECIPE {CLEAN EATING, GLUTEN-FREE, DAIRY-FREE}

Ingredients
  • 1 medium-sized Sweet Potato, baked, skin removed(about 1 cup in volume)
  • 3 Eggs
  • 1/3 cup Coconut Oil
  • 1/2 cup Honey
  • 1 1/2 teaspoons Vanilla Extract
  • 3/4 cup Spelt Flour for Clean Eating, Gluten-Free flour for the Gluten-Free diet or regular white flour can all be substituted equally.
  • 2/3 cup Raw Cacao Powder
  • 1/2 teaspoon Sea Salt
  • 1 teaspoon Baking Powder
  • 1 cup Dark Chocolate Chips
  • 1/2 cup Coconut Milk
Instructions
  1. Preheat the oven to 350 degrees. Coat a 9x13 baking pan with olive oil spray.
  2. Place the cooked sweet potato flesh, eggs, coconut oil, honey, and vanilla extract in the base of a food processor.
  3. Process until smooth, scraping down the sides as needed.
  4. In a mixing bowl, combine the spelt flour, cacao powder, salt, and baking powder.
  5. Add to the food processor and process just until combined, scraping down the sides as needed.
  6. Scrape the batter into the prepared pan and bake in the preheated oven for 15-17 minutes, or until a toothpick inserted in the center comes out clean. Be careful to not over-bake these, they are best removed when just set.
  7. Remove the brownies and let cool completely.
  8. In a microwave safe bowl, add the chocolate chips and 1/4 cup of the coconut milk.
  9. Microwave for 45 seconds.
  10. Whisk the melted chocolate and coconut milk together until smooth.
  11. Add in the remaining 1/4 cup coconut milk and whisk until smooth. Let set at room temperature for 30-45 minutes, or until cooled and thickened.
  12. Frost the brownies with the ganache and cut into squares. Store covered at room temperature or in the refrigerator.

BROWN SUGAR BAKED PEACHES

Ingredients
  • 1 fresh peach
  • 1 tsp. unsalted butter, divided
  • 2 to 4 tsp. brown sugar, divided
  • Sprinkling of ground cinnamon, to taste
Directions
  1. Halve peaches and remove pit. Place in baking dish, skin side down.
  2. Place 1/2 teaspoon butter in the hollow of each peach, top each peach half with 1 or 2 teaspoons brown sugar, and sprinkle with cinnamon.
  3. Bake at 375 degrees until peaches are tender, about 30 minutes. Serve warm.
