re you looking for a great breakfast you can have on the go? One that is packed with protien, veggies and won't enhance your waistline? Try a healthy breakfast casserole or quiche. This can be made 100's of different ways, but I am going to share with you the way I made it. There are 100's of ways to turn this healthy breakfast into a heart attack on a plate, so keep your goals in mind when you putting this together. Ingredients: 8 eggs 1 cup of milk - I use non dairy such as almond or coconut milk Veggies of choice: Use whatever veggies you want 1 cup or more Spinach 1 cup or more Red bell pepper 1 cup or more Onion 1 can or equivelent Black Beans Pinch of Salt Pinch of Pepper Pinch of Cayenne Pepper How to Prepare: Chop veggies and lightly sautee. Stir eggs and milk together separately. Coat a 9x13 baking dish with oil, butter, or spray to keep casserole from sticking. Mix veggies with egg mix & add seasoning. I mix looks to be a bit "dry", add another egg. If you are like me, you add a bunch of veggies - you want to be sure all the veggies are coated in the egg mix. Add mix to baking dish and bake at 375 degrees for approximately 45 min to 1 hour. Check this after 30 minutes to gauge the progress. The casserole is done when all the egg has been baked to a solid form. This dish will make approximately 8 decent size squares. I like to top my in spicy salsa.
